This is one of my "hot buttons."
William D. Heffernan, Professor and Chair of Rural Sociology, University of
Missouri at Columbia, gave a paper called Sustainable Agriculture: People,
Products and Profits for the Leopold Center's 1994 conference. It was
published in Proceedings and recently re-published in the Seed Savers 1995
summer edition (my source.) He quotes several sources of information so you
may wish to contact him and the Leopold Center, directly.

Vertical integration of the human food chain is, I believe, a serious threat
to the very survival of the human species.
Continuous, widespread education is our best hope for changing this.
Go forth and educate!
