Micheal,

My USDA chart is at least 25 years old so gives only data for green bells.
My understanding is if you let them ripen to red, they will increase in
vitamin C.

1 medium bell pepper is about 75 grams - I'll let you do the math

93 percent water
15 cal
1 gm protein
4 gm carbohydrates
7 mg Calcium
.5 mg Iron
310 IU Vitamin A
.06 mg Thiamin
.06 mg Riboflavin
.4 mg Niacin
94 mg Ascorbic acid
