Cattle Breed Information Needed

First I hope I do not insult anyone opposed to eating meat, however I would
like some
information on cattle raised for food purposes.
What breed would you suggest a person raise that is interested in producing a
high
quality, flavorful, lean, free range organic beef ?
Would you go with a standard like Angus or Angus cross or perhaps one of the
new Japanese breeds that are supposed to have a lower saturated fat content
and perhaps cross it with Angus ? I have also read about the Longhorn/Saler
cross as
being a good choice.
I would appreciate your input and any resource information that you could
direct my way. I most definitely am not looking for feedlot information so
could the suggested breeds do well on grass range. Would grain feed
supplementd fatten them to much ?
