Small scale cheese production

Kevin Martin asked for information on small-scale, high-quality
production of cheese from sustainable/organic milk producers.

Kevin, the Center for Integrated Agricultural Systems at UW-Madison
is involved in a project related to this area, in conjunction with
the Wisconsin Rural Development Center, the Wisconsin Specialty
Cheese Institute, and others. This project focuses on the potential
for an alternative milk marketing structure, but the possibility for
alternative/small-scale/local/specialty cheese production angle flies
side by side with it here in Wisconsin.

They can share with you information/leads on models that the project
team has gathered to date, as well as refer you to folks who are
interested or involved in pursuing the local/specialty cheese
