Objectives: Small producers can not (and should not) compete on the same
level with the corporate farms, but may be able to produce a unique product
that appeals to an up-scale market. This forum will bring together Farmers,
Processors, Marketing Specialists, Researchers, and Representatives from
State and National Agricultural Agencies to engage in a dialogue addressing
issues and options that face small producer survivability and profitability.

1. The NC Swine Industry: Is there a place for small farms?

b. Slaughter constraints and prices
c. Importance of Small Farms
d. Panel Discussion

2. Potential angles for marketing: Finding the Lost Taste of Pork!
a. Factors that influence the taste of pork: a review
b. Alternative (upscale) markets:
c. Green and ASH Labels
d. Panel Discussion

3. Slaughtering options:
a. Revitalizing an existing Small Slaughter Plant
b. Contracting a “uniform” supply to an existing plant
c. Backyard kill floors for ethnic markets
d. Potential to kill 500 hogs/year on farm without inspection (i.e. poultry,
rabbits)
e. Panel Discussion

4. Advantages and disadvantages of cooperating and Coops

5. Production Bits and Pieces:
a. Pasture Raised Pork for Profit
b. Pasture development
c. Breeds of Hogs for taste and outdoor production
