Today, most of us have the luxury of choosing what we eat, but it is not
always so easy to know how our food choices will affect us and the world
around us. How can we choose The Spiritual Dimensions of Food foods that
will nourish us as beings of body, soul and spirit? What food choices can
best express our love and compassion for all the other creatures that share
the Earth with us? In this course we will explore the origins and
development of food and nutrition. We will seek to understand the nature and
destiny of the plants, animals and spiritual beings that feed us, and our
growing power and responsibility to guide their future evolution. We'll
learn about the different methods used to produce food today, and how these
affect the quality of the foods we eat, as well as the quality of life for
all the inhabitants of the farm. We'll consider Biodynamic farming and
Community Supported Agriculture as models of systems that provide truly
nourishing food while allowing a larger community to participate in the farm
experience.
Barbara Sullivan is a biodynamic farmer/gardener and a pioneer in the CSA
movement. As an apprentice with Alan Chadwick, she studied the Biodynamic
French-intensive system of gardening. At The Mother Earth News' Eco-Village
in North Carolina she established biodynamic gardens and a small-scale
livestock program. She attended Emerson College in England, completing both
the Agriculture Course with Herbert Koepf, and the Voice Course with Ursula
Koepf. In 1987 she and her husband co-founded The Kimberton (Pennsylvania)
CSA garden which they continue to operate.
