Janet,

You could think along the line of plants nearest to the ocean as they
are used to salt, salt water and salty air. Marsh plants such as reeds,
and dune plants such as beach plum cactus and maybe even poison ivy are
worth considering. Certain conifers (scrub pine) that grow in sandy
regions are worth checking out.

Can the water be left out to evaporate?

Since you are near the Atlantic Ocean - look at what plants are native
to the area.
