Paddock Mud

hi!

I am wondering if anyone can give me some advice:

We've got a little pony that we have had for many many years and she, like
so many of her brethren has a tendency to over-eat; the vet and other horse
folks have said that when the spring comes ( we are in floyd, virginia-in
the mountains) that we ought to put her up in a dry lot. Well we just moved
this year and built a new barn and are still working on the fencing for the
paddock. As a result everything around that barn is just deep deep mud,
mainly just from the recent construction but definitely the entire "lot" is
foot sucking mud. Is there anything we can plant to provide a ( quickly
growing) root system or perhaps recommendations for something to put down to
help with the mud? We would need to plant something that she would find
unpalatable or at least be able to restrain herself. Any advice would be
very very helpful
