  I've listened to all the tapes of Sally from the Small Farm Conference in
Noblesville, Indiana. Sally is indeed a very educated fan of eating clean
fats from animals raised on pasture. In fact, I would have listened to all
her speeches had it not been for the fact that we were busy cooking the food
for the conference. Sally actually ate our sausage for breakfast and roast
pork for lunch. That meant an awful lot to me!

How do we take on the monumental task of educating consumers that clean
animal fats are in fact health foods and essential in diets? And then how
do we make sustainable produced livestock products available to the masses?
