On the Weston A Price Foundation website, look under Traditional Diets and
read the article on China. It contains a thorough discussion of Campbell's
work.
I would also suggest that Guillermo first carefully read the introduction to
the second edition of Nourishing Traditions. I worked on it a very long
time. All statements are backed up by references and my whole philosophy of
eating, and about vegetarianism, is there. After that, I would be happy to
answer his questions.
A propos of lard and the uneducated: Lard in the Mexican diet is one of the
few sources of vitamin D. It is an extremely important part of the Mexican
diet. Unfortunately, the "educated" have been convinced that they should
avoid foods like lard. Anyone trying to get the "uneducated" to stop using
lard (and other animal foods) should carefully examine the long term
consequences.
