This is off-topic within topic....

For an article I'm writing on native american use of corn, I'm looking for
a definition of 'nixtamalisation' that I can reference (I'm not finding it
in any of the on-line dictionaries (that I can afford) or in any of my
reference books here. ("Nixtamalisation" is the name of the process used by
native americans to alter the nutritional content of corn by applying
alkaline substances to it (be it woodash or lime). The process removed the
hulls from the corn, but it also made many nutrients in the corn (notably
B-vitamins and tryptophan) more available for human assimilation.

If you have a reference for a definition of this word, it w.b. greatly
appreciated.
