Hey Ralph, Donna, Kathryn, et alia.

As small farmers we need to get the word out that our eggs with high
yellow yokes, hard shells and small air sacs are available through small
farmers. Let's let our consumers know abuot this and let them be the
judges of our products. Our products are nutritious AND they look
good. Remember all the lessons about making things more attractive
through packaging? This is a natural for us.

For Donna, let's test you idea for selling duck eggs. I know that in
some places I've lived, duck eggs were preferred to chicken eggs because
their whites were firmer (tougher to some) and they're larger. A food
wholesaler friend of smallfarms.com keeps reminding me to have small
farmers tell why their products are different from what he handles.

I see the small farmers here being cutting edge. As we move quality
products to the next level, the DOAs and Extension services will
follow.
I think it would be unfair for us to expect them to take leadership in
our behalf - it might not even be desirable. Like you, I'd like the
help, but sometimes it's not in the cards we hold.
