Folks: just a quick note - there is a superb and lengthy treatment of the various
effects of grass, breed, management, handling, etc. on meat quality in the latest
issue of Stockman Grass Farmer. It includes quite a bit that I didn't know,
particularly about the timing of laying down of fat vs. lean, and implications for
timing of diet quality changes. Ann
