Lon -- are you aware of the giant survey that the Organic Farming
Research Foundation (OFRF) in Santa Cruz, CA has conducted every two
years since 1993? So far, there are three survey results available
(from '93, '95 and '97) and although the survey has changed in format
(getting better and more complete each time) and scope (the first
one is regional, the last two are national), much of what you are
looking for has been surveyed there already. Depending on what
you're doing with the information, you may want to look into this.
