I recently came across a brochure for a place called the Vermont Food
Venture Center. Don't have any direct knowledge of it, but it sounds like
the sort of incubator you're talking about (not dedicated to particular
kinds of products though). It's a joint Federal (USDA Rural Development),
State & local economic development council project, subtitled "The place
to start and expand your food business." A membership fee of $75
entitles you to services such as a half-day food safety & sanitation
course, assistance in wholesale ingredient & packaging purchase, and
access to a processing room, bakery and kitchen. There is also a
business development service & revolving loan fund. It's located in
northwestern Vermont.
