How to Grow Mesclun or Baby salad Greens

I live in the Caribbean and wish to grow mesclun. I your name on the Web. I
would say I am in Zone 11, I believe and would really be happy if I could find
someone who could help me. I need information on the yield of baby salad greens
or mesclun in pounds per foot, or square foot etc. How many people can eat from a
pound of mesclun. I have an idea of the number of side salad
and meal salad servings per pound, but I need this verified. I also want to
know to know yield per area if one plants a variety that can be cut three times,
and one that can be cut twice. Also I need be clear on the depth of soil that
the whole plant requires, do you plant them in 3 inches or 6 inches of soil, or
do they need more depth? I assume as they do not head that (i.e. 3 inches) is
enough. Also how many cuttings can a plant survive before it bolts, or dies,
etc. Also tell me how much of each type should be planted, i.e. the proportions
planted and how they translate into the proportions in the actual mix. I need to
be able to determine how much seed I need to purchase say for 100 lbs yield per
harvest. What are the best varieties for Zone 11? I had searched the web, and I
have
gleaned info on varieties for a number of garden writers and Extension Bulletins
on the Web. But, I cannot find the yield data and spacing data that one would
need to prepare a production plan, an investment plan or a financing plan or
feasibility study. Tell
me of any other seed I would need to purchase to develop of my own brand of
Mesclun. Any help you can give me would be
appreciated. Could you suggest the seed that I should consider for a climate
that is generally 75 to 85 degrees farenheight. As you see I live in the
Caribbean so I
am not able to visit USA farms an my extension agents know nothing of this crop.
So any little piece of info can get or one can give me helps me to develop my
business plan and decide how much investment I need to make.
I am an agriculturist. I work with Government. I recently did some studies at
Duke University in North Carolina. I was introduced to the Mesclun while there,
I love to eat it and feel that there is a market for this product here, so I want
to start it as a hobby, which may become my early retirement occupation. So any
little thing you tell me will go far.
