Many varieties of rapeseed produce an oil that is not edible, oil that
contains hydroxy- fatty acids and maybe other toxic or indigestible
substances. Breeding efforts developed varieties that produce edible oil,
and these are usually called "canola." Other varieties have been developed
to accentuate the production of indigestible substances in the oil, which
have various industrial uses as lubricants and feedstocks. Most of the
breeding work has not involved transgenic methods.
