Dear Sanet,
Just an anecdote, but I remember being at the offices of ISMAM (the
principle organic coffee producer's coop in Chiapas) when the results of
their caffiene test came in from the lab. They were amazed that it was
only a few points above what the expensive Swiss water process they were
about to invest in was supposed to give. The comment from the lab people
was that in general they found organic coffee to be lower in caffiene. They
also said higher altitud translated into lower caffiene, and that "gourmet
organic coffee' was just about as good as decaf. Food for thought, anyway.
