meat irradiation

Beth, perhaps you are ready to buy the technology of food irradiation as
safe but there is the other problem of "unsafe" meat processing plants that
still bothers me. Why are we having this plague of infected processed
meats? Instead of solving that problem we will use gamma radiation to make
the meat safe to eat. Are we suffering from "side effects" of massive
factories and nationwide distribution systems which we think gives us
"benefits of scale". I for one don't like those benefits and deal only
with local, small-scale operations, where I know the owner-operator, where
I can see for myself how the place is run. As for ground beef, which has
caused a lot of sickness and death, I never buy it. If I want ground meat
for hamburgers or meatloaf or whatever, I use chuck steak and grind it
myself using a very inexpensive hand grinder. For those of you who haven't
tried it, this method produces a very superior product and usually at a
lower price. For those who find this too much trouble, I guess they will
have to eat irradiated meat.
