mouse damage

We have an organic orchard in eastern Ontario, Canada - two main problems
in winter are deer and mice. Deer feed on the new growth and mice will
girdle the bark of the tree at it's base. We have sustained considerable
girdling damage this year and are looking for advice on the best means of
preventing damage in future and how to properly bridge graft the damaged
areas. Any assistance would be truly appreciated.
