Friends - we run a CSA here in SE Ohio, providing organic produce to
50-70 households. We're considering getting a few pigs so that we can
supply our customers with pork. Does anybody have any tips on where to
look or who to talk to re. the economics of such an endeavore? I need to
know, for example, how much it costs to have a pig butchered, and how much
I can expect to make selling the pork from one pig, and so on. Any
pertinent info would be greatly appreciated.
