I can't really speak for Bill, but I thought of the tropical forests cut down for grazing cattle, when I read about beef in the same line with forest clear-cuts.
Your eloquent defense is bang-on.
Interestingly, foresters can make a strong defense of clearcutting, too (at least from the perspective of CO2 emission), since a lot of the forest products go into fairly long-lived ("sequestered") uses and because the forest land goes right back into high-C fixation mode in subsequent years.
Nevertheless, once the global system has been swamped by the fossil fuel CO2 humanity has release so quickly, all these other, more natural and sustainable, sources get highlighted as contributors to the problem.
No easy solutions, for sure; sometimes I wonder if there are going to be solutions at all...(at least, not voluntary ones)
