In the August 1998 issue of the Bureau of Labor Statistics' Monthly
Labor Review, the lead article is on food inflation. In that article
there's a table on "farm value", which is defined as the prices received
by farmers for the quantities of raw farm commodities that must be
purchased from farmers in order to sell a unit of food product at
retail." It's basically the % that farmers receive out of the retail
price.
This table gives farm values for certain fruits, vegetables and meats.
However, the real gem is the listing of the source - a report from the
USDA. It's called Food Cost Review 1996 by Howard Elittzak, USDA
Agriculture Economic Report No. 761, table 5 on page 7.
