You are indeed correct that the research indicated a reduced viability for
E.Coli. and not a reduction in numbers. However, I wonder what would happen if
the diet change occured earlier in the production cycle, or, at the beginning
of the production cycle. Instead of affecting the characteristics of existing
colonies, perhaps we would find a different mix of organisms. Who knows, but
it might be interesting to find out.

As for your comment that this would create an interesting regulatory problem,
I guess I fail to see the problem. We have regulations that encourage
practices for the production of wholesome food. How would this differ? From an
industry point of view, if research indicated that a change in practices
produced a safer product, wouldn't the industry jump at the opportunity? Why
would forced regulations be required? What kind of message would the industry
be sending if it decided not to adopt safer production methods? I must be
missing this point as well.
