The terms "hydrocolloids, polysaccharides, gums," or even
"stabilizers" are often used interchangeably to characterize a class
of polymers which are very useful to the food industry, but often
poorly understood and sparsely covered in academia. This seminar is a
heavily demonstration-oriented presentation which will focus on three
of these polymers. While covering basic chemistry and physical
properties of alginates, xanthan and gellan gums, we demonstrate
these properties visually and also illustrate commercial applications
of these unique characteristics. ...
