You are right. I was mostly thinking of western produce,
However proper hygiene is much more important than sterilizing the
products themselves in both foodsystems.

E. coli, salmonella and the others are killed by cooking properly and
taking proper procaution they will not transfer from uncooked to cooked
foods.
The best reason to sterilize foodproducts is that they can be even
older before they have to be sold. (if produced hygienic and kept clean
during processing)
Small amounts of most bacteria are not dangerous and will keep the
immunesystem updated and active which I think is very important.

(BTW irradiation is not legal in NL)
