organic dairying: work experience

Does anyone have any suggestions who I can contact about getting
some practical experience on organic dairy farms (preferably cattle)
in the States. I've just finished a PhD on small scale dairying in
Mexico and would like to milk some cows and make cheese, just for a
change. I have experience on intensive dairy farms in the UK and
want to learn about organic dairying. I hope to be visiting the
States in the New Year, and would love to visit some farms
aswell as get practical experience. A work visa is not an option it
seems, so I'd be looking for somewhere needing part-time help for
board and lodging. Periods of a week to a month would be good.
Any suggestions ?
