Who buys organic food and the GATT

I'd be grateful if anyone could suggest any publications which document
'who buys organic foods' in terms of consumer demographics.

An unrelated topic but I'm also trying to locate articles on food and the
GATT written since DEC 1994 when the Uruguay round was completed.
