Madison CSA cookbook question

Howdy, SANETters--

A clarifying question for Sharon Lezberg regarding the CSA cookbook
for which she's collecting recipes.

She said that eating regionally and seasonally are important concepts
for the cookbook, therefore "no asparagus/eggplant casseroles."
Household technologies like dehydration and canning can stretch
seasons, however, and are simple and effective and accessible ways
to create a diverse local/seasonal diet.

Sharon, thoughts on this? Is there some level of appropriate
technology that can mesh with the effort to create local food
systems? I'm thinking that this could be a good opportunity to use
the cookbook to teach readers/eaters about technology assessment as
well as bioregional and seasonal diets.
