livestock/sustainable ag in Israel

I am trying to put together an internship this summer in Israel
living and working on a kibbutz or moshav that is doing sustainable
agriculture and, as my own project, researching the livestock systems there.
I am looking at the Golan and the Negev. I have several contacts there,
but I am putting this message out to SANETers in order to
gain the wealth of your knowledge and contacts and perhaps meet someone
who is actually doing this in Israel. I'm particularly interested in the
cattle ranching and dairying on the Golan and in studying the environmental
sustainability of these systems with regard to water pollution,
overgrazing and waste problems (as well as social and economic aspects). I
would really appreciate any info or contacts from anyone. Thanks!
