Molly A.; I teach a similar course, although at a lower level (2nd
and 3rd year undergrads). I don't use a formal textbook, because I
find that the material I WANT to cover is not usually contained, or
even significantly contained within a single textbook. But I make
good use of having the students read one or more chapters in several
books, such as:

Joy Tivy - Agricultural Ecology
Loomis and Connor - Crop Ecology (most advanced of this lot)
Briggs and Courtney - Agriculture and Evironment

I also use books offering detailed coverage of more limited topic
areas, such as:

Vallentine - Grazing Management
Frame - Improved Grassland Management
BGS publications (various)
Leck et al. Soil Seed Banks
Whittaker - Communities and Ecosystems
Luken - Directing Ecological Succession
Francis - Multiple Cropping Systems
Madden et al. - Sustainable Agricultural Systems
Pimentel and Lehman - The Pesticide Question
